Hilton Sydney launches bespoke culinary concept at annual events showcase – Travel Weekly

Hilton Sydney has unveiled a display of culinary excellence and audio-visual innovation at an annual industry event showcase in collaboration with event production and leading AV provider, Encore Event Technologies.

Media, stakeholders and buyers enjoyed a feast for the senses at the event showcase with seven speciality food stations including starting with caviar and champagne. It was then onto the ballroom for Peking duck, interactive live food displays, wines, cocktails and sakes from around the world and a stellar line up of live entertainment.

An array of fresh seafood.

Japanese drummers welcomed guests before being treated to an interactive live tuna cutting ceremony by Ishii San and Ryu Toru and a taste of the sashimi from a massive yellowfin tuna. Entertainment included performances by Celeste Strings and bands Bermuda Social and Larger than Lions.

Hilton Sydney has long been one of Australia’s premium event venues for large-scale events in the business and events arena with cutting-edge audio-visual and service capabilities and is keen to get back on the board as a leader in the field.

Now, under the direction of new executive chef, Hamish Neale, Hilton Sydney has unveiled an innovative event food and beverage concept that can be as big, bold and dramatic as budget allows. Neale is among a new cast at the Hilton, set to raise the stakes in Sydney in the competitive conference and events space.  Underpinned by innovation, a global influence and unrestricted creativity, the changes to the George St venue are set to attract people looking to impress on the event experience front.

“Event organisers place so much time, money and investment into organising quality, bespoke events only to be faced with generic food packages that can often be restrictive or uninspired and this is absolutely not the case at Hilton Sydney,” Hamish Neale said.

“Australians have an incredibly sophisticated palate and we are lucky to have some of the best produce in the world on our doorstep; our food philosophy has always been to celebrate this. We are dedicated to ensuring that no matter where you dine in our hotel you will be experiencing an unforgettable culinary journey.

“My vision was to create a collaborative menu approach where we can work together to build a culinary offering custom-made to the audience and event. There are no barriers on how big we can go. Whether you want a live tuna carving demonstration by a Japanese master before serving melt-in your mouth sashimi, a caviar station with matching Grey Goose vodka or a fun sundae and chocolate fountain buffet, we can bring that vision and theatre to life.”

Encore launched new creative production innovations.

Encore, together with Hilton Sydney, also launched new creative production innovations at the immersive showcase, which include incredible uses and applications of light and LED to create theatrical moments, presentations, theming and pathways.

New products included Flown LED Banners, which demonstrate the creative applications of LED like the ability to cover lighting rigging with animated content and Ayrton Rivale Profiles, which are superior moving lights that command attention with stunning colour beams and texture FX around the room.

Further innovations included Astera Titan Tubes, which are battery powered and programmable tube lights that can create interactive pathways; Projection mapping which capitalises on existing room surfaces to create high impact digital theming and Prolights Diamondbacks which are used for stunning strobes, beams, and creative lighting FX.

Finally, Animated Holding Graphics which allows bespoke content to play across multiple custom screens and delivers themed content specially designed to meet the event’s vision and proceedings.

“Encore’s partnership with Hilton Sydney allows us to offer an enhanced guest experience with access to new, unique and immersive technologies which include incredible uses and applications of light and LED to create theatrical moments, presentations, theming and journeys,” Hilton Sydney general manager, Malcolm Zancanaro, said.

“Now, coupled with a best-in-class food and beverage offering led by the same team that runs our esteemed, glass brasserie, Hilton Sydney is paving the way for an unmatched event experience. We’re bridging the gap between clients and suppliers, to bring visions to life and create seamless experiences for event organisers.”
